This week we visited Katerra Exotics which is a ranch located in Katy, Texas that produces pasture-raised bison and other grass-fed meats. Patrick Bierschwale and his father operate two ranches with the original ranch where the main production herd is located in the Frio Canyon just outside of Leakey, TX. The newest ranch located in Katy, TX is where the family lives full time with the bison and other animals.
It was simply a treat getting to see the actual care taken for these animals and knowing that there is such a close connection to the meat being a smaller family operation. Patrick let us come along as he worked his daily chores and the goats where definitely another favorite of ours even though they made a quick exit when we moved closer.
