If you’re looking for an upscale, highly-rated Vietnamese Restaurant, Resilience Viet Kitchen & Bar will not disappoint at all. This contemporary restaurant is at 1140 Eldridge Pkwy in Houston, Texas. The vibe walking in was pleasant with a warm welcome by our waitress. Daniel has raved about this place, he has had lunch here multiple times now with a coworker. He has sent me lunch pictures whenever he goes. So the hype has been made. Right away I saw how clean and open it felt. I loved the feel and aesthetic of the whole restaurant. I can see why it attracts many local offices filled with professionals.

We typically order water with our meals, but I wanted to try a different beverage. Resilience Viet Kitchen & Bar has a wide variety of drinks to choose from. I asked the waitress which drink was her favorite. She said without hesitation, the red juice and strawberry lemonade. Daniel right away decided to get a large Pho with steak and meatballs (P4). Diego’s favorite was on the menu, Softcrab salad. He was surprised it was on a salad. I decided to request that as an appetizer for us to share. Daniel mentioned numerous times that the grilled pork vermicelli bowl was awesome, so I went with it. He did say it was really big so I figured I would split it with Diego. Daniel ended up ordering egg rolls as well. He said we just had to try them.

Our drinks came in and our drinks looked so vibrant and fresh! Diego’s strawberry lemonade was such a pretty pink color, garnished with lemon slices and a strawberry. Diego said the flavor was strong and he loved it. My red juice was a much-needed refreshing, vitamin-filled drink. I think my body was craving it. The red juice has red beets, oranges, apples, celery, carrots, and lemon. This juice reminded me that I have a juicer. I’ll need to get back into it and try the combination of the fruits and veggies of the red juice. Seriously it was so good that it left me wanting more.

Soon after, the soft crab salad was delivered. We dug right in. The soft crab tasted like it was air-fried. I don’t know if it was because we didn’t ask. It did seem like it was because it wasn’t greasy at all. The soft crab was crunchy and a bit flaky. There were quite a few soft crabs on top of a bed of green salad. Vinaigrette was lightly spread over the salad and crabs.

Drizzled on top of the soft crab was this creamy-flavored sauce that reminded me of an aioli sauce. It gave an extra flavor to the crunchy soft crab.

The egg rolls came in just when we were about done with the soft crab. These were not your average-size egg rolls. These were Texas-sized egg rolls because it was HUGE! The order came with four of them and a small bowl of fish sauce.

The rolls were so flaky and crispy. Daniel said they were just as good as his next-door neighbor made them where he grew up.

Daniel’s hot bowl of pho came next and when they say large it’s more huge! I tried the broth and wow! Let’s just say I think it could cure the common cold. I wish I was joking. This kitchen loaded up the bowl with not just the pho noodles but also the steak and meatballs. The broth drew me in like the AC does in the summer heat. It was so rich in beef flavor. I couldn’t get enough. Floating on top were green onions, and purple onions with a couple of jalapeno slices thrown in. I think if I had my red juice and pho I would be set in my vitamins for the week.

My grilled pork vermicelli bowl didn’t disappoint. I was overwhelmed by the size of the bowl and the heaping amount of food that was in front of me. I was relieved that I was sharing with Diego. The waitress remembered that we were sharing and brought an extra bowl for us. The attention to detail from the staff at Resilience was spoiling me. Details like this will keep me a loyal customer.

I split up the bowl and there was plenty for both of us to share. I made sure to give Diego enough grilled pork but like most teenagers, he was still hungry for more. Daniel ended up ordering some spring rolls. The spring rolls were just scrumptious. The peanut sauce complimented the rolls so well. I didn’t want the meal to end.

Note: Daniel previously visited and had the Pork Banh Mi and said the bread had a slight crunch which was perfect and the ingredients made for a great sandwich.


It was just a great cuisine experience and I look forward to our next meal. Daniel is lucky to have a restaurant like Resilience Viet Kitchen & Bar so close to his work, with that said I will remind him to take us again soon.
