Trying to find a new place to eat can be overwhelming because it is easier to go to the same place that you are familiar with. However, when you find that golden little nugget, you’re excited that you stepped out of your bubble. Castillo’s Mexican Restaurant on 1420 Katy Fort Bend Road in Katy, Texas was that golden little nugget for us.

Walking inside Castillos had a friendly and familiar vibe. Inside the colorful decor was eye appealing from the table tops to the walls. Looking at it from the outside, you’d never know how cute it was on the inside. My favorite painted wall inside was the one dedicated to the city of Katy. I thought it was a nice homage to Katy High School and known landmarks from the town.

Ordering your food is simple enough. You walk up and order at the counter. In exchange, you will receive a number for your order. Next, grab your coffee or drink and find a seat to wait for your order. As I waited, I noticed their bar under the breakfast menu on the wall. To my delight, I saw Jamaica!!! Oh boy, that’s my weakness! However I haven’t had my morning coffee yet so Jamaica will have to wait for the next time, which there WILL be a next time.

Daniel and Diego ordered breakfast tacos GALORE! Between both guys, they ordered one chorizo and egg, two bacon and egg, and five Barbacoa with cilantro and onions.

Daniel kept saying how great the chorizo and egg taco was. He was regretting he only bought one.

I took a small bite of the bacon and eggs, and the barbacoa tacos. From that small taste, I wasn’t sure if they out-ordered me or not. Either way, I thoroughly enjoyed my meal and I’m glad the guys inhaled their tacos. Daniel told me that the bacon and egg in the taco was unique because it seemed to be made with more bacon ends. He also said that the owner told him as he left that breakfast is served all day which is fantastic.

The Barbacoa was great too as it was not greasy at all. It was juicy and it was Stuffed with meat and topped with the cilantro and onions it made the taco “pretty Epic” as Daniel mentioned.


The boys were willing to try Castillo’s weekend-only Menudo. We ordered that to share. I opted for something else other than tacos. I ordered from their breakfast specialty, the chilaquiles. Castillo’s chilaquiles had homemade corn tortilla chips smothered in their famous tomatillo sauce, a signature ranchero salsa, topped with queso fresco, fresh diced onions, and two eggs. I requested two over-easy eggs and an avocado. I was also asked if I wanted green or red tomatillo sauce and I chose green. My eyes 👀 grew big when my plate came because it was a huge amount. I had no idea it was going to be a lot of food. I liked the chilaquiles. Their signature green tomatillo sauce was mouth-watering and had a kick. Also, their menu reads that it is smothered and they didn’t disappoint there because the corn tortilla chips were drowning, for me though I loved it! Whoever made my order was very generous with the sauce and queso Fresco! I loved my meal because I felt like it was made with a lot of thought and care.

The menudo came at the same time as my order of the chilaquillas. It was a bright red color and the perfect temperature. The boys loved it and enjoyed the flavor. They were right it was pretty good. I just wish it had more of a spicy kick to it. Honestly, it’s what I’m used to. Daniel and Diego don’t care for too much spice so they ate most of the menudo. What I especially liked about it was that it was not super salty. Some menudos are so salty that you’re reaching for a jug of water when you’re done, not at Castillo’s Mexican Restaurant though it was simply great.

As we sat and devoured our breakfast we noticed the line was getting longer and longer. I have a good feeling Castillos will have many many repeat customers. I hope when more people find out about Castillo’s Mexican Restaurant in Katy, Texas, they will get the same warm welcome feeling I did. Everyone was so nice from the greeting to the departure.
